Is it kosher to eat rack of lamb in a restaurant by holding the the bone?

When my dad went to Paris on a business trip, his dinner companion was eating his dish by holding the bones of the rack of lamb? Is this just Parisian etiquette or can you eat rack of lamb this way anywhere?

I'd say anything with a bone in it should 1st be eaten properly with a knife and fork (except ribs, of course), and then, depending on the restaurant and country, pickup the bone delicately and chomp away!

rack of lamb ribs and chicken like buffalo wings are all ok to eat with your hands.
